Ingredients:
1/4 c bacon grease
3 T coconut flour
3 T almond flour
2 c chopped sweet onion
2 c chopped celery
3 cloves minced garlic
20 oz diced tomatoes w/juice
2 c chicken stock
2 bay leaves
1/2 lb crab meat
1 lb shrimp
1/2 lb sliced andouille sausage
1 T file powder or 1 lb okra (for thickness)
Roux:
Heat bacon grease in stock pot.
Chop veggies & garlic.
Combine flours in separate bowl.
Add flours into bacon grease, stirring constantly until dark brown over medium/high heat. CAREFUL!
Add veggies & garlic. Stir until onions are translucent.
Add stock & bay leaves. Bring to a low boil.
Add crab, shrimp and sausage. Simmer over medium heat.
Enjoy after 1 hr of simmering!
